Hello all.

I'm here with yet another "Is this meat ok to eat?" question.

(Yes I will toss the liver, regardless. My concern is the Meat).

Question: Is the meat ok to eat or not?

Looks ok to me.

I use liver from spring beaver for catfish bait in the river the beaver came from. Works real good.

Update:

Also I just heard from a friend who went to Penn State for Animal Agriculture and is a farmer: The Meat will be fine to eat.

Next thing:

Secondly and unrelated, I got another small beaver where I nicked the little sack between the liver. The answers from two friends were this:

1.) Soak it in salt-brine.

And this:

1.)
"bile duct. it has an off flavor and can discolor meat but doesnt have a food safety concern.

the natives used to relish the bile because of the salt and mineral content and drip the bile on raw meat and eat on a buffalo kill."


So I'm keeping them both.
